To kill off the excess yeast put the container in the freezer and let it freeze solid for two days. Let the container sit for 30 days or until the balloon deflates on it's own. The yeast eating the sugar also creates the alcohol. Carbon dioxide can escape but air can't get in because of the pressure. When this happens pierce 1-3 holes in the balloon. After the 24 hours the balloon should have started to inflate because of the carbon dioxide that is produced from the yeast eating the sugar. Put the balloon over the mouth of the container and let it sit for 24 hours. Add yeast and shake the bottle really well. If you use water add some dissolved sugar (300g per liter). You can top it off with water if you run out of juice. Fill the container but leave some air space. To make homemade wine you will need one large 5 gallon container, fruit juice high in sugar, wine yeast or bakers yeast, a balloon, and a siphon or coffee strainer.
